Easy to follow recipes, delicious without tweeks!,
Easy to understand recipes that I originally made as patties and now have gone the extra step of buying casings on line and stuffing. They taste great as patties, but there is something about barbequing links that beats out frying them up in your kitchen.
The book -- indexed nicely, easy to find recipes/names of sausages you know, ingredient list for each sausage is clear, steps couldn't be simpler. Much more than sausage recipes included, too. Basic smoker designs, bacon, ham, jerkies. Of the non-sausage included recipes, I've only done ham and a jerky. My ham turned out nice (but to be fair, drier than the store bought -- maybe I need to increase the moisture indicated), the jerky was a [h**l] of a lot cheaper and tastier than the packaged variety.
Long story short, I hadn't made sausage prior to this book and found the instructions and recipes easy to follow. Of the 8 sausage types I've made so far there haven't been any ingredients that weren't readily available at my store (I was a bit shocked to learn the "Jimmy Dean" copycat breakfast sausage was so straightforward), or any trouble understanding what the heck I was supposed to do.
I haven't tried the hot dogs or salami recipe yet so I can't comment on them.
